It’s funny when I tell people that I don’t actually like eating dessert and that I’m someone who derives pleasure from just baking a cake, rather than consuming it. Why? Because I love being a feeder, not just to fatten everyone up, but rather because I love that people feel special when you bake them something.
It’s amazing how a home-baked item can elevate someone’s mood. I know it sounds stupid, however a homemade cake is always valued over a shop bought cake. It’s because it makes you feel special, that someone has put energy, love and care into making something delicious (or sometimes not so delicious) for you.
I made this cake for a friends 30th birthday as I wasn’t trying to do anything overboard or extravagant as this person just wanted a low key/relaxed birthday. This is the perfect cake for a birthday celebration, as it’s simple to make, flavoursome and summery.
You can probably tell from all my recipes that I am a big fan of the coconut and lime flavour combination (for a good reason). The things that make this cake fantastic is:
Three layers of moist butter cake
The butter cake is fine to be made in advance
Sweet white chocolate icing complemented with zesty lime and tart raspberry
And of course, the nutty flavour of the coconut bringing all the flavours together
